INGREDIENTS
1/4 cup sun-dried tomatoes, coarsely chopped
1 large garlic clove, chopped
2 tbsp. capers, drained
1 tbsp. red wine vinegar
1/2 tsp. lemon rind
4 c.’s arugula leaves (approx. 5 oz.’s)
1/2 c. olive oil
salt & pepper
pinch of sugar (to balance out flavor) optional
METHOD:
Place first 6 ingredients in the food processor and pulse until a coarse paste results.
Pour in olive oil gradually, blending until incorporated and smooth and a little loose.
Taste and season to preference with salt, pepper, and/or sugar.
