Four Cheese Mushroom Ragu Lasagne

1 box lasagne, prepared

*Mushroom Ragu sauce (see below)

2 cups ricotta cheese, room temperature

Salt & pepper, to taste

1 medallion Boursin-type Gournay cheese

1 cup shredded mozzarella

1/2 cup parmesan cheese

  1. Preheat oven to 350F.

  2. Combine ricotta with gournay cheese until smooth, add salt and pepper to taste.

  3. Spread ladlefuls of mushroom ragu across bottom of pyrex baking dish.

  4. Cover the sauce with lasagne sheets. Spoon and spread 1/3 ricotta mixture over the lasagne sheets. Pour a few ladlefuls of mushroom ragu on top of this.

  5. Repeat process until lasagne and ricotta mixture is used up (there will probably be some mushroom ragu leftover-lucky you!)

  6. Sprinkle evenly with mozzarella and parmesan. Place in oven and bake for 25-30 minutes.
